Ingredients:
2 2oz cup Aveyo Chipotle Mayo
2 eggs, scrambled
1/2 cup roasted vegetables (e.g., bell peppers, zucchini, and mushrooms)
1/4 avocado, sliced
1 tablespoon salsa
Salt and pepper to taste
DIRECTIONS:
Scramble the eggs and set aside.
In a bowl, mix the roasted vegetables with Aveyo Mayo.
Add the scrambled eggs on top, then layer with avocado slices and salsa.
Season with salt and pepper and enjoy.
