Ingredients:

  • 2 2oz cups of Aveyo Original Mayo

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/2 tsp ground ginger

  • 1 cup sugar

  • 2 large eggs

  • 1 cup pumpkin puree

  • 1 tsp vanilla extract

DIRECTIONS:

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

  3. In a large bowl, mix mayonnaise and sugar until creamy.

  4. Beat in eggs one at a time, then stir in pumpkin puree and vanilla extract.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Pour the batter into the prepared loaf pan.

  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
